Paleo Lamb Burgers

When I started using Herbalife products in January, I stopped eating red meat, for the most part. I ended up ordering a jalapeno burger at Burger Up in February and got extremely sick after eating it (probably due to the grease and the fact my body wasn’t used to it), so since then I’ve barely touched red meat.
Well, now it’s summer time, and I’ve been craving a burger – a big, fat juicy, homemade burger. I made these lamb burgers for the first time several years ago and LOVED them, so I decided to make them again this weekend. They are super easy to make – and paleo!

Paleo Lamb Burgers with Caramelized Onionsย 
Serves 3-4 (I usually make 3 burgers)
Prep Time: 10 mins
Cook Time: 10-20 mins (depends on how you like your burger)

For the burgers:
1 lb of ground lamb
1 bunch of parsley (finely chopped) OR 3 tbsp dried parsley
1 tsp garlic powder
1 tsp of sea salt
ground pepper
1 avocado, sliced (as topping)
1 head of lettuce (to use in place of buns)

For the onions:
2 small yellow onions, sliced
coconut oil for caramelizing

Directions:
Turn stove on medium heat, and put in a couple tablespoons of coconut oil. I like to use a cast iron skillet for this, but any pan will work. Cook your onions until they’re caramelized (they’ll be soft and should be a rich, brown caramel color). Remove the onions from the stove once they are finished cooking. In the meantime, form 3-4ย patties by placing the meat, 3/4 of your parsley (use all if you’re using dried), garlic powder, salt, and a few grinds of pepper, into a large bowl. You can cook them on the stovetop or grill, and it really depends on how you like your burger cooked. Rare ground meat grosses me out, so I cook mine well-done.ย Once your patties have finished cooking, top with sliced avocado, caramelized onions and fresh parsely! Place on a pile of fresh greens/lettuce and you are all set!

I paired them with my Simple Kale Salad and sweet potato fries. Yum!
